PUMPKIN APPLE BUTTER

1 can pumpkin
2 apples, peeled and rough chopped
1 cup unsweetened applesauce
1/4 cup maple syrup
1/2 cup sugar substitute of choice
1 tsp cinnamon
1/2 tsp pumpkin pie spice
1 tsp vanilla extract
1/2 tsp lemon juice
1/8 tsp salt

Combine all the ingredients until smooth and add to crockpot.  You may also mix directly in the crockpot.  Cover and cook on high 3 - 4 hours 
or low 6 -8 hours. Check along the way to make sure the apples are tender. Allow to cool enough to use a blender, food processor or stick blender to completely smooth out the mixture and blend in the apples. Cool and store in the refrigerator for up to 2 weeks.
