POTATO VEGETABLE MEDLY
*this makes a lot. If not making for prep or a crowd I would definitely cut it in half.
5 small potatoes, peeled and cut into half moons
4 small carrots, peeled and cut into thin rounds
1 medium onion, cut into wedges
House Seasoning or salt and pepper
1/4 cup chicken broth
2 medium zucchinis, cut into half moons
Place the potatoes, carrots and onions in a large sprayed casserole dish. Sprinkle with House Seasoning, Add the
chicken broth, cover and cook for 30 minutes at 400 degrees. Then remove from oven and add zucchinis and season
them. Return the cover and bake approximately 30 more minutes or until carrots are tender.
