POTATO & LEEK SOUP
from Simple Nourished Living
2 teaspoons olive oil*
2 carrots, peeled and sliced
2 celery stalks, chopped
2 medium onions, chopped
1 pound leeks, sliced** (3-4 large, white and pale green parts only)
2 cloves minced garlic
8 cups chicken or vegetable broth
1 pound potatoes (3-4 medium), peeled and diced
Salt and pepper to taste
Add oil to a large soup pot and add carrots, celery, onions, garlic, and leeks. Partially cover the pot with a lid and cook, stirring occasionally, until the carrots have softened but are still holding their shape and the onions and leeks are lightly golden. Then stir in the broth and potatoes and bring to a boil. Reduce heat and simmer until the potatoes are done. Makes 8 servings. ( approximately 1- 1/2 cups)

* I do not count this olive oil. You may add it in and see if the points change.
** Do not use the tough dark green leaves, only the white and part of the light green. They are very sandy an must be washed really well. Slice each stalk into fourths and slice into small pieces. Wash and rinse them until all the dirt is removed.
