PIEROGI CASSEROLE

1 cup finely chopped onion
Cooking oil spray
2 cups fat free cottage cheese
1 egg
1/2 teaspoon onion salt, or to taste
2 cups mashed potatoes, made with milk and butter
1 cup shredded cheddar cheese, divided
salt and pepper, to taste
9 lasagna noodles, cooked and drained
Cook onion in oil spray until softened and set aside. In one bowl mix cottage cheese, egg and onion salt. In another
bowl mix potatoes, 2/3 cup cheddar cheese, salt and pepper. To assemble start by placing three noodles in the bottom of a
sprayed 9 x 13 baking dish. Top with all the cottage cheese mixture and three more noodles. Top this with all the potato mixture
and the last three noodles. Spread the onions over top and sprinkle with the rest of the cheese. Cover with foil and bake
at 350 for 25 minutes. Let stand 10 minutes before serving. Makes 8 servings
