PIEROGI STUFFED SHELLS
18 jumbo pasta shells, cooked and drained
2 1/2 cups (24 ounces) Bob Evans Sour Cream and Chive mashed potatoes*
6 ounces shredded Cabot 75% Light cheddar cheese
chopped green onions, to taste
Heat potatoes as directed on package then place in a bowl. Stir in most of the cheese leaving out just enough to sprinkle the tops of each shell. Spoon potatoes evenly into shells and place in a greased 9 x 13 inch baking dish. Bake covered in foil for 20 minutes. Remove foil and bake another 10 minutes or until heated through and cheese is thoroughly melted. Makes 18 stuffed shells.
On all plans as written:
1 shell = 3 pts
2 shells = 6 pts
3 shells = 8 pts
*You may use any kind of mashed potatoes you like just be sure to calculate in the recipe builder. I also calculated using the frozen Ore Ida Steam & Mash potatoes and the points decrease. If you use plain mashed potatoes add 1/2 teaspoon each onion and garlic powder, or to taste (taste before stuffing just to make sure it's flavorful enough. Because the sour cream flavor potatoes were so delicious I would also add some sour cream to taste, but not enough to thin the potatoes down too much. You could really season the potatoes any way you wanted.
