PICKLED EGGS

8 - 12 eggs, boiled and peeled
1 can beets, sliced or cut
1 small onion, thinly sliced
1/2 cup apple cider vinegar
1/4 cup sugar or other granulated sweetener, I used Truvia Sweet Complete

Drain beet juice into a small saucepot and add the vinegar and sugar.  Bring to the boil then lower
heat and simmer for 15 minutes.  Place eggs, beets and onions in a dish or jar that can be covered
and pour hot beet juice over top.  Cover and refrigerate 2 days before eating.  You may choose
to stir the eggs and beets around several times during those 2 days if they are not completely
submerged in the liquid to ensure a more even pickling.
