PEPPER STEAK

12 to 16 ounces beef stir fry meat
1/4 cup low sodium soy sauce
1 clove garlic, mined
1/2 teaspoon fresh ginger
1/2 cup sliced green onions
3 cups bell peppers, cut into thin strips
3/4 cup water, divided
2 tablespoons cornstarch
2 medium tomatoes, cut into wedges, optional

Marinate beef in soy, garlic and ginger overnight.  Drain and sauté in a little bit of oil until done. 
Add onions and peppers and all but 2 tablespoons water and cook until tender adding more water
if necessary.  Mix cornstarch with remaining 2 tablespoons water, add to skillet and cook until thickened.
​Again adding more water if necessary.  Add tomatoes and only heat through.
