PEANUT BUTTER PECAN BAKED PANCAKES
1 1/2 cup Kodiak pancake mix
1 1/2 teaspoon baking powder
4 tablespoons powdered peanut butter
1 egg
2 tablespoons 0 point sweetener of choice, I use Lakanto monkfruit
1 teaspoon vanilla
1 cup unsweetened almond or cashew milk
chopped pecans*
Whisk together the dry ingredients then add the egg, milk and extract. Pour into a greased 8 x 8 or 9 x 9 inch baking dish. Sprinkle with pecans. Bake at 350 for 30 minutes. Makes 4 servings.
Blue & Purple (4) Green (5)
*2 grams of chopped pecans is 0 points. When multiplied by 4 servings the recipe builder bumped up each serving 1 whole point. I don't agree with that math so I choose to not enter the full 8 grams of pecans into the recipe builder. I sprinkled 2 grams per quarter and count it as 0 added points because I'm only eating one pancake per day. As always you do as you see fit for your journey.
