PEACH PECAN BAKED OATMEAL
2 cup old fashioned oatmeal
1 - 2 teaspoons cinnamon
1/2 teaspoon salt
3/4 teaspoon baking powder
1 1/2 cups unsweetened applesauce
1 cup unsweetened almond or cashew milk
2 tablespoons Lakanto Golden brown sugar substitute
2 eggs
2 tablespoons sugar free pancake syrup
1 teaspoon vanilla extract
2 cups fresh or frozen peaches, chopped*
11 grams pecans, chopped
Cinnamon Sugar, optional
In a medium bowl mix together all the dry ingredients. In a separate larger bowl mix together all the wet ingredients. Combine the dry and wet ingredients.
Fold in the peaches and pecans . If desired sprinkle with some cinnamon sugar. I use the one I made with Lakanto sweetener. If you use real sugar be sure to account for any points. Pour into a baking dish a sprayed 9 X 9 baking dish. Bake at 375 for 45 minutes or until a toothpick comes out clean. Let cool slightly before serving. Makes 4 large servings.

*Taste peaches before adding them. You may need to toss with a little bit of 0 point sweetener or add little bit more to the batter if you like it sweeter. I serve mine with sugar free syrup so it may not need the extra sweetener. Just use your judgement.
