OVERNIGHT BAKED OATMEAL

2 eggs, lightly beaten
3 cups unsweetened almond milk
1/4 cup oil
1 teaspoon salt
1 1/2 teaspoon cinnamon
3/4 cup brown sugar or brown sugar substitute
2 cups old fashioned oatmeal
1/4 cup dried blueberries
1/4 cup dried cherries
1/4 cup sliced almonds

Mix eggs, milk and oil until combined.  Add remaining ingredients and stir well.  Pour into a greased
8 x 8 inch baking dish.  Refrigerate overnight or at least 8 hours.  Stir and sprinkle top with almonds.
Bake 45m- 50 minutes or until a toothpick comes out clean from the center. Makes 6 servings.
