ONE SKILLET ROTINI

1 pound ground beef, 93% or above
3 cloves minced garlic
House Seasoning
1 can diced tomatoes, I like petite
2 (8 ounce) cans tomato sauce, divided
1 tablespoon dried basil
1/2 teaspoon dried oregano
4 cups water
12 ounces whole wheat rotini
1/2 cup skim milk
1 cup fat free mozzarella cheese

Spritz a large skillet with oil and add the hamburger, garlic and House Seasoning.  Cook until beef is done
and crumbled, Add the diced tomatoes, 1 can tomato sauce, basil and oregano.  Stir well. Reduced heat
and simmer, stirring occasionally, for 5 minutes. Add the water and rotini.  Add salt to taste. Bring to a boil,
cover, reduced heat and cook at a low boil, stirring occasionally, until noodles are tender. Taste for salt
and add as needed.  Pour in milk and remaining cans of tomato sauce.  Taste for basil and/or oregano.
if needed add more, to taste. Sprinkle with cheese.  Cover and let sit, off heat, for about 10 minutes or
more until cheese is melted.  It will melt thoroughly if allowed to sit long enough,
