NO BEAN CHILI
1 pound ground beef (you can also use turkey or chicken)
House Seasoning, to taste
1 small onion, chopped
1 small green pepper, chopped
1 teaspoon minced garlic
1 can sliced stewed tomatoes
1 small can tomato sauce
1 small can diced green chilies, undrained
1 tablespoon dried parsley
1 tablespoon chili powder (or less if too spicy)
1 1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon smoked paprika
Preheat a heavy Dutch oven or pot and add just a tad bit of oil. Add the hamburger and break apart with a spatula.
Season with House Seasoning. Add onions, peppers and garlic. Cook together, continuing to break meat apart
until the meat is done and vegetables have started to soften. Drain if necessary. Add tomato sauce, tomatoes and
green chilies. Using your spatula break up the sliced tomatoes into smaller pieces. Add the seasonings. Turn heat
all the way to low and simmer for about 1 hours. Makes 5 cups.
