NECTARINE SWEET BISCUITS
2 ripe nectarines, unpeeled and diced
1 3/4 cups flour
1 cup sugar substitute of choice
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 egg
1 teaspoon vanilla
1 cup nonfat plain Greek yogurt
1/3 cup skim milk
cinnamon/sugar (sugar substitute version)
Mix yogurt, egg, vanilla and milk until smooth then add sugar. Sift in flour, baking powder, soda and salt. Fold in nectarines. Divide evenly in well greased muffin pan and sprinkle the tops with cinnamon sugar and bake at 400° for 15 minutes or until toothpick comes out clean. Do not over bake. These are textured just like a moist biscuit. It is not overly sweet so you can add more sugar substitute if you want. Makes 12.
