MUSHROOM & SWISS CHICKEN
4 thin chicken cutlets
8 ounces mushrooms, sliced
House Seasoning
4 slices extra thin Swiss cheese
Season mushrooms and saute in a little bit of olive oil until browned and tender. Remove from pan and set aside. Season both sides of chicken and saute covered in a bit more olive oil until browned, about 3 - 4 minutes. Turn over and do the same for the other side. Once cooked remove from heat. Fold one slice of cheese in half and put one on each piece of chicken. Cover and let sit while the leftover heat melts the cheese. Serve with mushrooms on top.
