MINI FRITTATAS
12 eggs
1/4 small onion, chopped
1/4 small bell pepper, chopped
1/3 cup chopped mushrooms
1 ounce shredded Kraft fat free cheddar cheese
2 ounces shredded Cabot 75% light cheddar cheese
Spray a 12 cup muffin tin and evenly divide vegetables and cheese between them. Beat eggs together until they are completely combined and pour evenly between muffin cups. Try to fill about 3/4 full. Bake at 350 for about 20 minutes. Makes 12 frittatas.

**You can mix and match any vegetables and cheese you like. Points are totally determined by the fillings you use. Try not to overfill the muffin cups with the ingredients so your eggs will fit. There should be enough room for 1 egg per frittata.
