MILLET BREAKFAST CEREAL
1 2/3 cup millet
2 1/2 cups unsweetened almond milk or milk of choice
3 3/4 cups water
1 1/4 teaspoons cinnamon
2 teaspoons vanilla
3/4 teaspoon salt
34 grams raisins
Any toppings you like when servings such as bananas or other fruit, nuts, honey, coconut, etc.
Rinse and drain millet in a fine mesh colander or sieve. In a medium to large pot combine all the ingredients and bring to a boil. Reduce heat to low, cover and cook at a very low simmer for 20 - 25 minutes, without stirring, or until the liquid is absorbed and the cereal is the consistency of oatmeal or cream of wheat. Add toppings as desired. Makes 5 servings of approximately 7 1/2 cups of cooked cereal.
If making ahead of time stop cooking about 5 minutes early because millet will continue to soak up the liquid as it sits in the fridge. Reheat in microwave adding liquid if necessary to soften it back up.
Makes 5 servings approximately 1 1/2 cups each.
Points without toppings: Blue (8 ) Purple (1) Green (8 )
Amounts for a single serving:
1/3 cup millet
1/2 cup milk
