MICROWAVE REUBEN CASSEROLE
16 ounces kraut, drained and squeezed almost dry
12 ounce can corned beef, cut into small pieces
2 cups shredded swiss cheese
1/2 cup mayonnaise
1/4 cup 1000 Island dressing
2 tablespoons softened butter
1/4 cup pumpernickle bread crumbs, 2 slices*
Place kraut in bottom of sprayed 2 quart casserole dish. Top with corned beef. In a separate bowl stir
together mayonnaise and dressing. Spread over corned beef then top with cheese. Mix bread crumbs
and butter together. It should still be crumbly. Sprinkle over cheese. Cover and microwave 12 - 14 minutes.
