MEXICAN PIZZA
1 Ole Extreme Wellness High Fiber tortilla
1 can fat free refried beans (0 point variety)
1 small can diced green chilies, drained
2 tablespoons taco sauce*
20 grams sliced black olives, cut in half
29 grams Trader Joe's Lite Mexican Blend cheese
shredded lettuce
diced tomatoes
nonfat plain Greek Yogurt
1 lime
Place tortilla on baking stone or sheet and bake at 400 for 3 - 4 minutes or just until starting to crisp around the edges. While tortilla is baking put refried beans in a medium sized bowl and microwave for 1 minute to soften them up. Add drained green chilies and mix well. Once tortilla is pre-baked spread approximately 1/4 cup of the refried beans over top and cover with 2 tablespoons taco sauce*. Save beans in fridge to use later or freeze for even longer storage time. Sprinkle cheese evenly over top and then black olives. Return to oven and bake another 3 - 5 minutes or until cheese is melted. While baking this second time prepare the yogurt by mixing 1/2 cup with the juice of half a lime. You may add some lime zest as well. Stir until smooth and creamy. Remove tortilla from oven and before topping cut it into quarters. This step is not necessary but it makes it easier to handle once finished. Top with lettuce and tomatoes and drizzle with yogurt.
Makes 1 pizza/serving. Blue & Purple (5) Green (7)
*For the taco sauce I found something interesting when tinkering in the recipe builder. "Mild" sauce has 1 point for the 2 tablespoons. "Medium" and "Hot" do not. They are -0-. So your points will be determined by how much heat you like!
