MEXICAN LASAGNA II
1 pound ground beef
1 medium onion, chopped
1 can chili or pinto beans, undrained
6 ounce can tomato paste
6 ounce can water
1 package taco seasoning mix
2 cup shredded monterey jack cheese
8 - 12 lasagna noodles, cooked and drained*
Brown ground beef with chopped onion; drain if necessary. Add tomato paste, water, taco seasoning
and mix well. Stir in beans. Spread a spoonful of meat mixture on bottom of 9 x 13 inch baking dish.
Top with half the noodles, sauce and cheese. Repeat layers with other half of ingredients, ending with
cheese. Bake approximately 45 minutes at 375. Check around 30 minutes to make sure it's not getting
too brown. Any noodles sticking out of sauce and cheese may get a little crunchy.
You may also make in two 8 x 8 inch baking dishes and freeze one.
*If using a 9 x 13 inch dish it will take 10 - 12 lasagna noodles. If using two 8 x 8 inch dishes you should
only need 8 noodles.
