MEXICALI PIE
1 pound ground beef, 93% or higher
1 cup onion, chopped
2 cloves minced garlic
House Seasoning
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1 can kidney beans, drained and rinsed
1 1/2 cup cooked brown rice
1 cup fat free cheddar cheese
3/4 cup skim milk
2 eggs, beaten
In a large skillet cook hamburger, onions, garlic and House Seasoning, to taste, until meat is crumbled
and done. Stir in chili powder, salt and cumin until combined. Removed from heat and stir in beans,
rice and cheese. Mix well. Beat eggs into milk and add to hamburger mixture. Pour into a greased
9 x 9 inch baking dish. Bake, uncovered, at 350 for 25 minutes.
