MEATLOAF
1 1/2 pounds lean ground beef
2 eggs
1/2 cup chopped onion
1 cup shredded cheddar cheese
3 ounces crushed Ritz crackers
onion salt
garlic salt
dried onion flakes
paprika
white pepper, or black
ground mustard
ground coriander, a little less
Topping: ketchup, Worcestershire sauce, brown sugar
Beat together eggs and stir in the spices. I use equal amounts of spices, just in the heart of my hand, except coriander.
I use a bit less of it because it can be overpowering. Add egg mixture to the ground meat and combine. Add cheese, onion
and cracker crumbs and mix well. Pat into a sprayed loaf pan or baking pan. I like to poke holes down the center with
my fingers to help it cook evenly through but that's optional. Bake at 350. I have a hard time pinning down a time because
meatloaves will cook at different times depending on the moisture content, size of the meatloaf or even the dish it's baked in.
Just keep check on it and about 30 minutes before it'll be done mix the topping ingredients and pour over top. Continue to
bake that last 30 minutes. Topping will get browned and yummy. You can also add the topping after the meatloaf is fully
cooked and pop it under the broiler for a few minutes until browned and caramelized. However don't do this with a glass dish.
For the topping I go by taste. I start with a good bit of ketchup because we like a lot of topping. Then I add almost as much
Worcestershire and whisk well. Then I add the brown sugar a little at a time until it's as sweet as I like. You can leave off this
step if you prefer but it's our favorite part!
