MEATLESS MIXED BEAN SOUP
1 pound bag Nutstop.com 16 Bean mix or another other brand
1 chopped onion
2 cloves minced garlic
1 can beef broth
5 cups water
1 packet dry onion soup mix, or 2 tablespoons of my Homemade Dry Onion Soup Mix
1 teaspoon garlic powder
1 teaspoon celery seed, crushed
Mix everything in a crockpot. You do not need to soak the beans first. Cover and cook on high 4 - 5 hours. Beans will be almost falling apart tender.
I do not measure out serving sizes for Blue or Purple because I count this a 0 points for the entire pot. I'm not sure if my dry onion soup mix has points or not but at any rate I do not count points for seasonings especially ones that will be diluted down into a lot of broth.
Green will be determined on how many beans you end using so please calculate your points accordingly.
