MEATBALL SOUP WITH TINY PASTA
1 can beef broth
1 can diced tomatoes with onion, celery, green pepper 0r your choice
1 1/2 cups water
1/2 teaspoon Italian seasoning
8 ounces frozen Italian meatballs, the fully cooked kind
1 cup frozen mixed vegetables
1/2 cup small pasta such as ditalini tripolini, farfallini, stellini orzo
2 tablespoons finely grated Parmesan cheese
In a large pot add broth, tomatoes, water and seasoning. Bring to a boil. Add meatballs and vegetables
and simmer for 25 minutes, covered. Bring back to the boil and add pasta. Cook until pasta is done
to your liking. Sprinkle individual servings with Parmesan cheese. Makes 4 servings.
I doubled this recipe and frozen half in a freezer bag.
