MASHED POTATO CASSEROLE

3 medium potatoes
2 ounces cream cheese, softened
1/4 cup sour cream
1/2 teaspoon salt
1/2 teaspoon dried parsley
pepper to taste
1 clove minced garlic
paprika
3 teaspoons butter

Peel, cut and boil potatoes until done.  Drain and return to pan.  If using nonstick put potatoes in a medium
bowl.  Mash potatoes with a potato masher.  Add cream cheese, sour cream salt, pepper, garlic and dried
parsley.  Beat with an electric mixer until well combined and smooth and fluffy.  Pour into a small sprayed
casserole dish.  Sprinkle with paprika and dot with butter.  Bake at 350 for 30 minutes.  Makes 3 or 4 servings.
