MAMAW'S VEGETABLE SOUP
1 pound 93% lean ground beef
3 cans tomato soup, 1 family size & 2 regular
1 head cabbage, cut up small
2 cans mixed vegetables
1 can green beans
1 can corn
1 can sugar peas
6 cans water, 2 large & 4 small
1 tablespoon chopped dried onions, or more
1 tablespoon chopped dried garlic
fresh oregano, basil, dill and chives*
Brown beef in at least a 6 quart stock pot; drain if necessary. Add soup, all the vegetables (undrained)
and water. Stir well. Add seasonings. If you don't have fresh dried is fine because it's what I have always used.
Use the herbs to taste and omit any you don't care for. Add the cabbage last so you can only use as much as
will fit into your pot. Simmer at least one hour or until the cabbage is tender. Makes approximately 21 cups.
