MAKE AHEAD MEATBALLS

2 pounds 93% lean ground beef
1/2 chopped onion
2 eggs
1 cup plain dry breadcrumbs
1/2 teaspoon salt
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons dried parsley

Mix onions into ground beef; set aside. In a medium bowl beat eggs and add remaining ingredients.  Mix evenly into ground beef mixture.  Form into small meatballs, about 1" in diameter.  Place on a foil-lined and sprayed baking sheet and bake at 400 for 20 minutes. Mine took two sheet pans and I switched racks twice during baking.  If freezing I like to under bake so that when reheated they don't dry out, but if eating right away be sure to cook through.  Makes roughly 46 - 48 meatballs.
