LOW CARB PEPPERONI PIZZA CHICKEN BAKE

2 cups favorite low carb spaghetti sauce (I used 0 point marinara)
4 thin cut boneless skinless chicken breasts*
House Seasoning
olive oil spray
4 ounces sliced provolone or mozzarella cheese
2 ounces sliced pepperoni
To begin place spaghetti sauce in a medium saucepan and bring to a boil. Turn heat down, cover and
reduce sauce to half, or 1 cup. This thicker sauce will help it adhere to the chicken better and not be as watery.
While the sauce is reducing season chicken with House Seasoning and brown both sides in a bit of olive oil spray.
Place in a sprayed baking dish that's just big enough to hold the chicken. When reduced pour sauce over chicken
coating each piece completely. Top evenly with pepperoni slices and cheese. Bake at 400 for 25 - 30 minutes
until chicken is done and cheese is melted. Makes 4 servings.

*If using large breasts cut them in half horizontally to make thinner pieces. You can use up to 8 pieces of
chicken in this recipe, but you may need to use a little bit more cheese.
