LOW CARB CARROT PANCAKES
1 1/2 cup Birch Benders Keto pancake mix
2 tablespoons chopped pecans
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1 egg
1 cup almond milk
1/3 cup brown sugar substitute, I used Lakanto Monkfruit Golden
1 teaspoon vanilla
1 cup grated carrots
TOPPING
4 ounces cream cheese, softened
1/4 cup powdered sugar substitute, I used Lakanto
1/2 teaspoon vanilla
pinch cinnamon
To make the pancake batter stir together the pancake mix, pecans and spices in a large bowl. In a separate bowl beat together the egg, milk, brown sugar substitute and vanilla. Pour into dry ingredients and mix until combined. Stir in the carrots. Make pancakes on sprayed griddle or frying pan using 1/4 of the batter for each one. Recipe should make 12 pancakes. Transfer to a wire rack to cool. While they are cooling make the topping. Beat the cream cheese until smooth and add the sugar, vanilla and cinnamon and continue to beat with an electric mixer until smooth. Serve over pancakes. I also added a bit of sugar free syrup. Delicious!
Makes 6 servings of 2 pancakes per serving.
