LOW CARB BISCUITS

2 cups almond flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, beaten
1/3 cup butter, measured solid then melted
Sift almond flour and whisk in baking powder and salt; set aside. In a separate bowl pour melted butter into beaten eggs and whisk until well incorporated. Pour egg mixture into dry ingredients and stir until just combined. Do not overmix. Drop by spoonfuls onto a parchment paper lined baking sheet. I used my small cookie scoop. Press the tops down just a bit. I greased my fingers with the melted butter left in the bowl to keep them from sticking. Bake at 350 for 15 minutes. Let cool on pan. Makes 12 - 15 biscuits.
