LOW CARB BAKED SQUASH

6 cups sliced yellow squash, 1 1/2 to 2 pounds
1 small onion, chopped
4 tablespoons butter
3 eggs
1 cup heavy whipping cream
House Seasoning to taste, or salt and pepper
1/4 cup grated Parmesan cheese

Slice squash into half moon shapes and saute squash and onion in butter until just tender. Carefully transfer,
without the liquid, into a greased 9 x 13 baking dish.  In a bowl beat the eggs, milk and a little more seasoning. 
Pour evenly over top of the squash and sprinkle with the cheese. Bake at 350 for about 40 minutes or until set
​and the top starts to brown.  Makes 8 servings.
