LOW CARB BAKED SQUASH
6 cups sliced yellow squash, 1 1/2 to 2 pounds
1 small onion, chopped
4 tablespoons butter
3 eggs
1 cup heavy whipping cream
House Seasoning to taste, or salt and pepper
1/4 cup grated Parmesan cheese
Slice squash into half moon shapes and saute squash and onion in butter until just tender. Carefully transfer, without the liquid, into a greased 9 x 13 baking dish. In a bowl beat the eggs, milk and a little more seasoning. Pour evenly over top of the squash and sprinkle with the cheese. Bake at 350 for about 40 minutes or until set and the top starts to brown. Makes 8 servings.
