LOADED SMASHED RED POTATOES
2 pounds red potatoes
olive oil or olive oil spray
salt and pepper to taste or seasoning of choice
Toppings: shredded cheese, sour cream, crumbled bacon, sliced green onions, avocado, etc.
Fill large pot about 1/2 to 2/3 full with water (leaving room for potatoes) and bring to a boil over high heat. Add potatoes, cover and reduce heat to medium. Cook until potatoes are fork tender, about 20 minutes. You can also cooked them in the Instant Pot. For small potatoes I cook for 7 minutes and let do natural release for 5 minutes.
Cover a large baking sheet with foil and spray with cooking spray. Place cooked potatoes on sheet and using a potato masher or bottom of a drinking glass gently press each potato down until it spreads out but doesn't break apart. Brush tops with olive oil or spray with the olive oil spray and sprinkle with salt and pepper. Bake at 450 degrees for 20 - 25 minutes or until edges of potatoes are slightly golden brown. Remove from oven and immediately sprinkle with toppings. Serve warm.
The points on this are completely determined by the ounces of potato you eat and the toppings you use. So just weigh your potatoes first and then count your toppings.
