LITE STUFFED SQUASH

2 medium yellow squash
4 slices whole wheat bread, toasted crispy and cubed small
1/4-ish finely chopped onion
1/4 reduced fat shredded cheddar cheese
1 egg
House Seasoning to taste, or salt and pepper

Place squash in a large pot and cover with water.  Bring to a boil and boil 10 - 15 minutes or until you can
easily pierce the squash with a knife.  Do not cook until completely soft or they will fall apart when you try to
scoop out the pulp. When done remove squash to a large bowl of ice water to cool.  If you're
not in a hurry you can also let cool on it's own.  When cool enough to handle cut squash lengthwise into
two halves.  Scoop the pulp out leaving a little bit on the shell so it doesn't tear or fall apart.  In a bowl stir
together squash, toast cubes, egg, onion, House Seasoning and cheese.  Stir really well to combine
completely.  Stuff into each squash.  Place on a baking sheet and cover.  Bake at 375 for 20 minutes.  Remove
cover and bake another 10 minutes or until top starts to brown.
