LITE GREEN BEAN CASSEROLE
1 pound fresh green beans
oil spray
1/2 red onion, thinly sliced
2 cloves minced garlic
4 ounces chopped mushrooms
2 tablespoons flour*
1 cup beef broth
1 cup milk
salt and pepper to taste
1⁄2 cup panko bread crumbs
Cut the ends off green beans and cut into smaller pieces. Drop into boiling water in a large pot. Cook until they
are tender or to your liking. Drain and set aside. In the same pot spritz a little bit of oil spray into the hot pot and
add onions, garlic and mushrooms. Cook until all the vegetables are tender. Sprinkle with the flour and stir to
mix in well and cook about 1 minutes. Then add the stock and milk and little at a time, stirring well after each
addition to keep it from clumping. Cook, stirring frequently, until the sauce thickens. Add the green beans back
to the pot and stir well. Pour into a sprayed 8 x 8 inch baking dish and top with panko crumbs. Spritz the crumbs
lightly with oil spray. Bake at 475 for about 10 minutes or until the crumbs start to brown. Makes 6 servings.
*I had trouble getting the sauce to thicken with the 2 tablespoons of flour so I ended up using some Wondra Instant
Flour to thicken it.
