LEMON GARLIC SHRIMP STIR FRY
1 pound medium shrimp that has been peeled, deveined and the tail removed
3/4 cup chicken broth
1 tablespoon lemon juice
1 tablespoon cornstarch
1 red bell pepper, diced
12 ounces (or more to taste) asparagus, trimmed and cut into bite sized pieces
1/2 chopped onion, or more to taste
3 cloves minced garlic
salt and pepper
1 lemon, cut into wedges with seeds removed
Begin by mixing the chicken broth, lemon juice and cornstarch; set aside. Preheat a large frying pan and
pray with a little oil. Add the shrimp and season with salt and pepper to taste.
Cook until shrimp are done then remove to a bowl; set aside. Pour off any liquid and spray with more oil.
Add the asparagus, red pepper, onion and garlic. Season with more salt and pepper. Cook until as tender as
you like. I cooked my asparagus by itself first just to make sure it got tender enough for me. I also covered
the pan to help steam it a little. Once vegetables are done give the cornstarch mixture a little stir and add it
to the pan. Stir until it thickens which is very qjuick. Return shrimp to the pan. Heat through if serving right
away. Serve with lemon wedges. Makes 4 servings of 1 cup each. Every dish will be different depending on
how many vegetables you use.
