LEFTOVER SOUP
1 container frozen leftovers
1/2 head cabbage, chopped small
1 bag frozen cut okra
1 -2 cans beef broth
2 - 4 cans stewed or diced tomatoes
dried onion flakes
salt & pepper
Mix everything together in a crockpot and cook on low all day or in a large pot on the stove and simmer until the cabbage is done to your liking. The points are determined by the ingredients you use and the size of your servings. Most likely it will be a 0 point soup on Blue and Purple and of course Green will be according to the type of vegetables you have.
The idea of this soup is something my mamaw did. She kept a bowl, usually a saved butter bowl, in her freezer and every time she had little bits of leftovers she put them in that bowl. Once the bowl was full she made a pot of soup. The soup is different every time you make it according to your leftovers. I have used just about every vegetable except strong smelling/tasting ones like broccoli, cauliflower, brussel sprouts and greens and meat like ham or other pork. I add in all other vegetables, rice, roast, hamburger, stew beef, etc. It's easier if you cut your meat into smaller pieces if necessary before freezing. This is a great way to not waste food and to have another "new" meal using leftovers.
