LEFTOVER CHICKEN CHILI
2 tbsp olive oil
1 large onion
2 cloves minced garlic
¾ teaspoon chili powder
¾ teaspoon ground cumin
¾ teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1 can diced tomatoes, undrained
1 cup chicken stock
1 can kidney beans drained and rinsed
8oz leftover chicken
Heat medium size pot over medium high heat and add oil. Add onions and garlic and cook until onions are
translusent. Add remaining ingredients and bring to a boil. Lower heat and simmer about 30 minutes or
until it begins to cook down and thicken. Makes 6 servings
