This is a recipe that can be multiplied to your needs. I try to pick onions that are smaller around
than the wells of my muffin top pan. Peel and cut onions into round, thick slices. Sprinkle a small
amount of cheese in bottom of each well. Top with the onion slice and more cheese. Bake
at 400 for approximately 10 -12 minutes. When the edges begin to brown remove from the oven,
Let sit in pan for about 5 minutes then remove to paper towel lined plate to drain and firm up.
Serve with BBQ Ranch dip if desired.
If you don't have a muffin top pan, you can also use a donut pan. Use an onion small than the inside
of the well and instead of a whole slice, pop out the center and use the remaining ring. Assemble and
bake as directed above.
If you don't have either of these pans you may be able to make small mounds on a parchment lined
baking sheet. I can't vouch for how well they old their shape because I've never made them like this.
