JICAMA HOME FRIES

1 medium jicama, peeled and cut into small cubes
1 tablespoon oil
1/2 red onion, chopped
1/2 green bell pepper, chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon salt

Heat 1 tablespoon oil in a large non-stick skillet.  Add jicama and sauté for 1 - 2 minutes.  Add 1 tablespoon water, cover
and let steam for 5 - 7 minutes over medium heat.  Remove lid and add peppers and onions.  Spray tops with a little cooking spray.
Sauté for about 5 minutes.  Mix together seasonings and sprinkle over top of vegetables and stir to combine.  
Continue to sauté until jicama is a browned as you'd like it to be and peppers and onions are done.
