INSTANT POT TERIYAKI CHICKEN
2 pounds boneless, skinless chicken breasts
1 or 2 bags fresh broccoli florets
Marinade:
1 cup low sodium soy sauce
1 cup water
1/4 cup sugar
1/4 cup Worcestershire sauce
3 tablespoons white vinegar
3 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon ground ginger
1 tablespoon honey
3 tablespoons cornstarch
3 tablespoons water
chopped green onion, for garnish
Mix marinade in the IP and cook on Saute until sugar and honey are dissolved. Add in chicken breasts. Cook on high 12 minutes and let do a Natural Release for 10 minutes before releasing all the way. Remove chicken, cut into cubes and return to pan. Put broccoli directly on top of the chicken. Replace the lid and set to cook for 1 minute. Do not cook the full 1 minute. This is set just to allow it to come back to pressure. As soon as the IP comes back up to pressure immediately do a Quick Release. Remove chicken and broccoli and set the IP on Saute. Thicken with cornstarch and water and cook until thickened as desired. Return chicken and broccoli to the sauce. Makes 6 servings.
