INSTANT POT PULLED PORK
4 pounds pork butt roast
House Seasoning or seasoning of choice
2 cups chicken broth or bouillon
liquid smoke
1 cup BBQ sauce
Trim heavy pieces of fat from the roast and cut it into 4 or 5 big chunks. Season all over with House Seasoning. Put chicken broth and a little liquid smoke in the pot and then add the pork. Pour BBQ sauce over pork but don't stir. Cook on high 50 minutes then do a 10 minute Natural Release before releasing all the pressure. Remove pork and allow to cool to the touch. Shred with your hands, or two forks, and discard any cooked bits of fat. Remove all but about an inch of the cooking liquid then put the pot on Saute. It will come to a boil. Add shredded pork and cook just a few minutes to allow the juice to soak into the meat. You can also use less cooking liquid and add more BBQ sauce to the pot when you Saute the meat.
