INSTANT POT PORK BABY BACK RIBS
1 - 2 racks of baby back pork ribs
dry rub
1 cup water
splash liquid smoke
BBQ sauce
The first thing you need to do is remove the silver skin on the back of the ribs. Loosen up the edge with a sharp knife then using a paper towel grab the skin and peel it off. Next season both sides liberally with the dry rub of your choice. Place trivet in bottom of instant pot and pour in water and liquid smoke. Coil ribs around outside of the pot. Both racks will fit perfectly together. Place on lid, close vent and set on high for 25 minutes. It will take about 20 minutes to come up to pressure. Let the pressure release at least 10 minutes or completely is fine. Remove using big tongs to a foil lined baking sheet. Brush the top with your choice of BBQ sauce and put under the broiler until the sauce has started to caramelize. Cut into pieces and serve.
