INSTANT POT PINEAPPLE CHICKEN

2 pounds chicken breasts, cut into bite sized pieces
1/2 cup brown sugar
1 (20 oz) can pineapple chunks in juice, undrained
1/3 cup soy sauce
1 tablespoon minced garlic
2 tablespoons corn starch
2 tablespoons water
Put chicken in instant pot. In a medium bowl mix soy sauce, brown sugar, pineapple with juice and garlic.
Pour over chicken. Close lid and seal vent and cook on High for 12 minutes. Let naturally release pressure
for 10 minutes then release the rest of the way. Turn pot off and then turn to Saute. When the liquid
comes up to the boil add the cornstarch which has been mixed with the water. Stir until thickened to
to your liking.
You can also freeze this. Freeze as one recipe state above or divide into two meals. I cooked one half
and froze the other. Just place all ingredients, except cornstarch and water, in a free bag. Label and freeze.
To cook follow directed above. You can also cook from frozen but you may need to add a couple minutes
to the time.
