INSTANT POT MONGOLIAN BEEF
2 pounds flank steak cut into 1/4" strips
1 tablespoon oil
4 cloves minced garlic
1/2 cup soy sauce
1/2 cup water
2/3 cup brown sugar substitute, I use Lakanto
1/4 cup molasses
1 teaspoon minced ginger
red pepper flakes to taste, optional
cornstarch and water
sliced green onions
Season beef with House Seasoning. Turn pot to Saute, add oil when it says Hot and brown meat in batches. Transfer to a plate or bowl as you cook. While still on Saute add soy sauce and water. Scrape any brown bits off bottom of the pot then add brown sugar substitute, molasses, garlic, ginger and red pepper flakes if using. (I don't use any!) Stir to mix well then cancel the Saute function. Add the add meat and any juices back to pot. Seal vent and cook on High 12 minutes. Do a 10 minute Natural Release then quick release the remaining pressure. It won't hurt it to let it do a complete Natural Release. Turn back on Saute and once boiling add your mixture of cornstarch and water and stir until thickened to your liking. Garnish with green onions.
Based on 2 pounds of flank steak this will make 8 4-ounce servings including sauce. When I build my recipe in the WW app I make the number of servings be the actual number of ounces of steak I use then track my servings by how many ounces I eat. A 4-ounce serving would be 6 points on all plans including the sauce.
