INSTANT POT MISSISSIPPI CHICKEN
2 pounds boneless, skinless chicken breasts
1 package Au Jus mix
1 package ranch dressing mix
pepperoncini peppers with juice, to taste
1 cup water or chicken broth
Place chicken breasts in instant pot and sprinkle with both seasoning packets. Add as many peppers as you like
and as much juice as you like. Pour water over top to make sure there are no dry powdery spots. Cover and cook
on high for 7 minutes. Let do a natural release for 10 minutes before releasing pressure the rest of the way. Remove
chicken and shred using hand mixer or two forks, etc. Return shredded chicken to the remaining juice in the instant pot.
You may choose to remove or keep the peppers.
