INSTANT POT MEATLOAF, POTATOES & CORN ON THE COB
Make all three courses in one Instant Pot at the same time.
Cut as many potatoes as you want a little small and put in bottom of the Instant Pot then add 2 cups chicken broth or bouillon. Set trivet directly on top of potatoes. Mix meatloaf and center it on a large piece of tin foil. Bring all corners of the foil to the top of the meatloaf and crimp to seal and set it down on top of the trivet. Place the corn around on top of the foil. Cook on high 30 minutes then do a NR for 10 minutes. You can use the potatoes as they are or drain potatoes for creamed potatoes.
I usually make mine in the 8 quart because I make a lot, but you can make this in the 6 quart. It will just depend on how many potatoes you put in the bottom as to how much room it leaves for the packet of meatloaf and corn. You can also leave off the corn if you don't have room.
