INSTANT POT CHUCK ROAST & VEGETABLES

3 pounds chuck roast
House Seasoning, or seasoning of choice
1 onion, quartered
2 cups beef broth
2 tablespoons Worcestershire sauce
4 carrots, but into bite-sized pieces
4 potatoes, cut into bite-sized pieces
1 package whole mushrooms, stems removed

Season roast on both sides with house seasoning. Turn Instant Pot to Saute and brown both sides in a
little oil. Add onion, broth and Worcestershire and cook on high for 45 minutes. Do a 10 minute natural
steam release. Then add vegetables and cook 12 more minutes. Do a 10 minute natural steam release. 
Remove vegetables and roast and turn the pot back on Saute. Mix 3 tablespoons cornstarch and 3 tablespoons
​water and whisk into boiling broth until thickened into gravy.  Spoon over top of roast and vegetables.
