INSTANT POT BUFFALO CHICKEN SLIDERS
2 pounds chicken breast
1 cup buffalo wing sauce, I used Sweet Baby Ray's Mild
1 cup ranch dressing
1/2 cup chicken broth (1 cup in using a 6 pot or larger instant pot)
2 tablespoons cornstarch
sliced green onions
slider buns, about 12
Place chicken in the instant pot. In a separate bowl whisk together wing sauce and ranch dressing.
Pour over chicken. Pour chicken broth around the top. Cover, seal and cook on high for 15 minutes.
When done let naturally release for 10 minutes before releasing pressure fully. Remove chicken
from pan and shred. I like to use my electric mixer. Set aside. Turn pot to Saute and whisk in
cornstarch and water which have been mixed, until thickened. Return chicken to pot. To serve,
place chicken on slider buns and top with additional ranch dressing and green onions.
To freeze place chicken in a freezer safe bag and top with mixture of wing sauce and ranch dressing.
Seal, lable and freeze. To make, thaw and cook as directed above.
