INSTANT POT BBQ CHICKEN

1 1/2 pound boneless chicken breasts
3/4 cup Ray's sugar free BBQ sauce, or your favorite
1/4 cup honey
1/4 cup water
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
House Seasoning or salt and pepper
1 cup chopped onion
3 tablespoons cornstarch
3 tablespoons water
Whisk together the BBQ sauce, honey, 1/4 cup water, onion and garlic powder in the instant pot.* Sprinkle both sides of chicken and place down in the sauce. Top with the onions. Cover, seal and cook on high for 6 minutes. Allow to rest for 5 minutes before releasing pressure. I let mine go 30 minutes and it was fine. Remove chicken and shred. I like to use the dough hook on my Kitchen Aid mixer but you can also use a hand mixer or do it by hand. While shredding the chicken put the pot on Saute and let come up to a boil. Mix the cornstarch and water and stir into the sauce until it thickens. It happens almost right away. Return chicken to the pot and coat it all with the sauce. The sauce alone makes 5 - 1/3 cup servings.
All plans for just the sauce is 4 points. Obviously Green will count the chicken as well.
*I used my small 3 quart instant pot and it was a perfect fit for this recipe.
