IMPOSSIBLE BREAKFAST CASSEROLE
9 ounces shredded hashbrowns, unthawed
6 ounces Land O'Frost Canadian Bacon, diced
1 small onion, diced
garlic powder to taste
salt to taste
2 ounces shredded fat free cheddar cheese, or your choice
2 ounces Trader Joe's Lite Mexican Blend, or your choice
4 eggs
2 cups plain unsweetened almond milk
1 cup Bisquick Heart Smart baking mix
In a medium to large bowl mix together hashbrowns, Canadian Bacon and onion. Sprinkle to taste with garlic powder and salt. Then mix in the fat free shredded cheese. Spread over the bottom of a sprayed 9 x 13 inch baking dish; set aside. In a smaller bowl whisk eggs then mix in milk until it's smooth. Whisk in the Bisquick and get out as many lumps as possible. Add remaining 2 ounces of cheese and a pinch of salt. Mix well and pour over top of the hashbrown mixture. Bake, uncovered, at 400 for about 30 minutes or until set. Let cool slightly before cutting. Makes 6 or 8 servings.
