HOMEMADE MCGRIDDLES
(I make these on my Dash Mini Waffle Maker)
1 cup Kodiak pancake and waffle mix
1 egg
1 cup unsweetened almond or cashew milk
1 teaspoon maple extract
sugar free pancake syrup
5 eggs
10 pieces Great Value fully cooked bacon, cooked and cooled
Make batter by mixing together the pancake mix, egg, milk and extract. Preheat waffle maker until light goes out and spray with cooking spray. Add 2 tablespoons batter to the maker, then a small drizzle of syrup and another scant tablespoon of batter. A full three tablespoons plus the syrup can make it spill over. After the waffles are done carefully wipe the down if necessary and keep them preheated. Be sure to spray them again before adding the eggs. Crack one egg into the waffle maker and break the yolk up slightly with a fork. Close the lid and cook for maybe 2 minutes. Keep an eye on them. Once done remove and cool. Sandwich one egg and 2 slices of bacon between 2 waffles. If making for meal prep wrap individually in paper towels and store in a container in the fridge. Reheat while in the paper towel for 30 seconds to a minute. Be care not to overcook. Makes 5 sandwiches.
